Anti-inflammatory Pancakes


Pancakes are a classic when it comes to breakfast or brunch. Then try our easy to make version made of our Moussaieff smoothie. If you like pancakes that are light, fluffy, and flavorful, you’re going to fall in love with this recipe! You can prepare the batter the night before in a blender. Keep it in the blender covered in the fridge and then just cook them the next morning when you’re ready.

Ingredients (Make 6 Pancakes):

  • 250ml cup milk
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 1 cup almond flour (or your flour of choice)
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 sachet of Pearly’s Moussaieff (or your Pearly smoothie of choice)

Prep time: 15 minutes + cooking time (circa 10 minutes)

Make your Pearly smoothie as usual, using a blender. Then add egg, vanilla extract and maple syrup, and blend to combine. Add flour, baking powder and salt to the mixture. Heat a nonstick pan over medium-low heat. You can leave it dry or spray with cooking oil/coconut oil. Pour a bit of the batter into the pan. Cook for 2-3 minutes, until small bubbles start to form on the top and the edges firm up. Flip the pancake and cook for another 1-2 minutes until the pancake is cooked through. Repeat for the remaining batter. Serve immediately with mixed berries on top, if desired.
