If you like pancakes that are light, fluffy, and flavorful, you’re going to fall in love with this recipe! You can prepare the batter the night before in a blender. Keep it in the blender covered in the fridge and then just cook them the next morning when you’re ready.

  • 250ml cup milk
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 1 cup almond flour (or your flour of choice)
  • 1 tablespoon baking powder

Procedure:

Make your Pearly smoothie as usual, using a blender. Then add egg, vanilla extract and maple syrup, and blend to combine. Add flour, baking powder and salt to the mixture. Heat a nonstick pan over medium-low heat. You can leave it dry or spray with cooking oil/coconut oil. Pour a bit of the batter into the pan. Cook for 2-3 minutes, until small bubbles start to form on the top and the edges firm up. Flip the pancake and cook for another 1-2 minutes until the pancake is cooked through. Repeat for the remaining batter. Serve immediately with mixed berries on top, if desired.

Enjoy!
