Energising Muffins

These energising muffins will give you the boost you need to start your day or, why not, to make your afternoon break a little bit more sweet.

Ingredients (makes 12 muffins):

Liquid Ingredients

  • 125 ml of water
  • 60 ml almond milk (or your milk of choice)
  • 60 ml coconut oil
  • 2 tbsp pure maple syrup 
  • 2 tsp vanilla extract

Solid Ingredients

  • 1 sachet of Pearly’s Jasper (or your Pearly smoothie of choice)
  • 130 g super fine almond flour
  • 30 g flaxseed meal
  • 2 tsp cinnamon
  • ½ tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt

Prep time: 10 minutes + cooking time (circa 20 minutes)

Procedure:

Preheat the oven to 190°C then add paper liners to a 12 cup muffin tin and set aside.                                                                                                                       To a large bowl add almond flour, ground flaxseed, cinnamon, baking soda, baking powder, and salt then whisk to combine and set aside.

To a high-powered blender, add the liquid ingredients in the order listed in the recipe and blend until completely smooth. Pour the wet ingredients into the dry ingredients then whisk to combine and let batter sit and thicken for 5 minutes. Scoop a spoon of batter into each lined muffin cup (You can use an ice cream scoop) then bake for 19-21 minutes or until a toothpick inserted into the centre comes out clean. Turn the oven OFF then leave the door slightly open and let the muffins sit inside for 5 minutes. Let the muffins cool in the tin for 10 minutes before transferring to a cooling rack to cool completely. Store in the refrigerator or wrap individually in plastic wrap and freeze.
